Tainan is famous for its fresh beef soup, but a lot of people don't know they also have amazing fresh lamb.
I used to take my friends who didn't eat beef all the way to Liujia for lamb, but since we discovered A Yuan, it's become our go-to spot.
It's closer to the city, and we all love it.
A Yuan isn't huge, with about half small tables and half larger ones.
I recommend making a reservation or getting there right when they open.

They have a menu for individual bowls of lamb soup, and another for lamb hot pot, which is great for groups.
[Lamb Offal Soup(Angelica)]
The angelica broth is mild and comforting, perfect for any season.
If you love organ meats, you can't miss this one.
It's got tender intestines, chewy tripe, melt-in-your-mouth lung,
And perfectly cooked, delicate liver.
[Lamb with Skin Soup(Clear Broth)]
The clear broth is made from tons of lamb and bones, so it's really smooth and delicious.
The lamb with skin is amazing—the skin has a nice gelatinous texture, the fat is tender, and the meat is perfectly cooked.
[Lamb Head Meat(Clear Broth)]
The lamb head meat has a similar layer of fat and lean as the lamb with skin, but the skin is a bit firmer. Because it's sliced, you can really taste the sticky, collagen-rich skin.

The slices are a good thickness, so they stay nice and chewy.

The fresh lamb slices have a great balance of fat and lean. I like to cook them quickly so they're still tender.
The crispy fried shallots and slightly milky lamb oil are a perfect match. Mixing in the sauce makes it even more addictive.

Make sure to mix the lamb oil and noodles while they're hot, so the unique, slightly milky flavor of the lamb oil really comes through.

The gravy is similar to a mild satay sauce with fermented bean paste.
[Stir-Fried Lamb Skin with Pickled Cabbage]
The basic seasoning is spicy bean paste, pickled cabbage, ginger, scallions, and garlic. The lamb skin is chewy and the flavors are super satisfying and perfect with rice.

Soft but with a nice, firm bounce.
The lamb skin jelly is pretty mild, so you can add extra flavor with their fermented bean curd sauce, sweet soy sauce, or super spicy chili sauce.
